Pork butts are smoking now, they should be ready in about 8 more hours. We smoke for 10-12 hours depending on the size of the butts. In the morning we will wrap them in plastic and hot hold them at 160F for another 8-12 hours. This is the part where the meat becomes REALLY tender, the resting! Once it has had a chance to rest, the juices will want to stay in the meat instead of run out, and the meat is ready to be pulled. Check out the site at and you will see
